This is another one of those “quick, make ahead and pop in the oven” meals. This is a really nice recipe. I always enjoy it because I can quickly prepare everything the night before, wrap it and store in the refrigerator. Then simply pop it in the oven when I get home from work.
Directions:
Yield: 6 servings
- Place chicken in a casserole dish or large roasting pan sprayed with Pam.
- Sprinkle with seasoning.
- Cover and bake at 375°F for 45 minutes.
- Remove from oven and add the remaining ingredients.
- Cover and return to the oven for approx 30 minutes or until sausage and chicken are cooked through.
Ingredients:
- 2 and 1/2 to 3 lbs of Cut up Chicken
- 1 lb of Smoked Sausage, cut into 1 inch pieces
- 1 lb of Unpeeled, scrubbed Baby Potatoes
- 4 Medium Sweet Peppers, cut into slices (Any color or combination of colors)
- 4 Medium Onions, quartered
- Salt, Pepper, Poultry Seasoning and Parsley, to taste
