These are very easy to make. They freeze well and are always a welcome addition at any gathering or event. This is a recipe that has withstood the test of time. I can remember my Great Grandmother making these when I was a child and here it is, four generations later and I am still making them and sharing the recipe with future generations.

Directions:

Yield: One 9″ x 12″ pan

  1. In a saucepan, combine dates and water. Bring to a boil, simmer, stirring constantly, until the consistency of jam is reached.
  2. Remove from heat. Stir in Vanilla and set aside.
  3. In a bowl, combine, flour, oats, brown sugar, salt and baking soda.
  4. Add melted Butter or margarine. Mix until combined.
  5. Press 2/3 of mixture in the bottom of a 9”x12” baking pan, lined with parchment paper.
  6. Top with date mixture. Spread evenly.
  7. Top with remaining crumb mixture and bake in preheated 350°F oven for approx. 20 minutes or until golden brown.
  8. Cool completely, remove from pan and cut into desired size squares or bars. Enjoy!

Ingredients (Filling):

  • One 500g Package of Pitted Dried Dates
  • 1 and 1/2 cup of Water
  • 2 tsps of Vanilla

Ingredients (Crust):

  • 1 and 1/4 cup of Melted Butter or Margarine
  • 1 and 1/2 cups of Brown Sugar
  • 2 cups of All-purpose Flour
  • 2 and 1/2 cups of Rolled Oats
  • 1 tsp of Baking Soda
  • 1/2 tsp of Salt
