BBQ season has arrived and Greek Salad is a great accompaniment to anything you may toss on the BBQ. I get a lot of requests for this recipe. It is always a favourite at any gathering. Greek Salad is one of the simplest things to make and is always very popular as a side dish, regardless of the occasion. It can be made up in a hurry and is a great dish for supper or lunch, especially during the hot summer months. Just add a grilled chicken breast, steak or any kind of seafood and you’ve got a really nice meal. Delicious and nutritious.

Directions:

Yield: As much as preferred

  1. Whisk salad dressing ingredients together and store covered overnight or for several hours in the fridge to allow flavours to blend.
  2. Toss salad ingredients together. Plate up and drizzle with dressing.

Ingredients (Dressing):

  • 2 cups of Extra Virgin Olive Oil
  • 1 to 4 tbsps of Sugar, adjust to suit your tastes
  • 1 cup of Red Wine Vinegar
  • 2 tsps of Chopped Oregano
  • 1 to 4 cloves of Garlic, minced
  • 1 tbsp of Dijon Mustard
  • 2 tsps of Basil
  • Salt & Pepper, to taste

Ingredients (Dressing):

  • Any combination of the following salad greens – Romaine Lettuce, Baby Spinach, Baby Red or Green Romaine, or Mixed Baby Greens
  • To taste, Fresh Cucumber Sliced
  • To taste, Fresh Tomato Wedges
  • To taste, Red Onion Slices
  • Any combination, Sweet Peppers (Red, Green, Yellow, Orange, etc.)
  • To taste, Kalamata Olives
  • To taste, Feta Cheese
