This recipe is “to die for”! It does take a bit of time but it is well worth it. It’s so rich and creamy and is always a hit with people of all ages.
Directions:
Yield: One pie
- If you wish to make your own absolutely delicious pie crust, follow my pie crust recipe. Prepare your crust before starting the filling.
- Separate the egg yolks from the whites and place into a small mixing bowl (watch the video below for instructions on separating the yolks). Once you have all three yolks separated, take a fork and blend the yolks.
- In a large saucepan, add the sugar, flour and salt. Mix together using a whisk until it is well combined and all the lumps are removed.
- Blend 1 cup of the milk into the flour and sugar mixture until you have a nice paste. Place over medium heat.
- While the filling is heating, add your coconut and mix.
- Heat the other two cups of milk in the microwave. Once the milk is heated, add a little bit to the egg yolks and mix together. This will temper the eggs and prevent any yellow strings of yolk in your pie. Add the yolk mixture to the remaining milk and mix together.
- Add the milk and yolk mixture to your pie filling heating on the stove. Continue to cook over medium heat, stirring constantly. Stirring will prevent the filling from scorching.
- After approximately 4-5 minutes you will notice the filling start to thicken.
- Continue stirring until the filling reaches the boiling point. Once the bubbles start breaking the surface, remove the pie filling from the heat. If the filling still isn’t thick enough after you reach the boiling point, continue stirring over heat until you reach the desired thickness.
- Add vanilla and butter. Mix until the butter is melted and thoroughly mixed.
- Pour the filling into our prepared pie crust.
- Place a piece of plastic wrap over the top of the pie, setting the plastic wrap directly on the filling. This will prevent the filling from forming a “pudding skin” on top. Let cool.
- Once the pie has cooled, top with whipped cream (read my instructions for whipping cream by hand) and cherries. Watch the video below for directions on decorating your pie.

- 1 tsp of Vanilla
- 2 tbsps of Butter
- 3 to 4 cups of Whipped Cream
- 2 whole of Maraschino Cherries (for garnish)
