This recipe truly is old-fashioned. It is a cookie recipe that I can remember my great grandmother making when I was a kid. They are quick and easy and absolutely delicious!
Directions:
Yield: 24 cookies
- Before you get started making the cookie dough, you need to prepare the raisins. Place the raisins and 1 cup of water in a saucepan on high heat. Once it reaches a bowl, let the raisins simmer for app. 5 mins. After they have simmered, drain the raisins and let them cool to room temperature.
- Place the sugar and shortening in a large mixing bowl. Mix together with electric mixer until it has a nice smooth texture.
- Add the eggs and mix again until nice and smooth.
- Add the raisins we prepared earlier and mix.
- Add the pecans or walnuts, if you wish, and mix.
- Add the baking soda, baking powder, salt, and cinnamon and mix.
- Add the flour and mix thoroughly.
- To form the cookies, I use a 1 1/2 oz. disher (ice cream scoop). Take a scoop and place onto a baking sheet lined with parchment paper.
- Preheat the oven to 400°F and bake the cookies for 15-20 mins. These cookies are pretty large so they take a little longer to cook than other cookies. Cook until they reach a nice golden brown color.
- You may wish to lower your oven temperature down to 375 or 350°F if you find that the cookies are browning on the outside and not cooking in the middle. Everyone’s oven temperature is different, so be careful.

- 2 cups of White Granulated Sugar
- 1 cup of Shortening, warmed to room temperature
- 3 large Eggs
- 2 cups of Raisins, seedless
- 1/2 cup of Pecans or Walnuts, chopped (optional)
- 1 tsp of Baking Soda
- 1 tsp of Baking Powder
- 1 tsp of Salt
- 1 1/2 tsps of Cinnamon
- 4 cups of All-purpose Flour
Why wouldn’t you add the raisins last, so they don’t get mashed up when you’re mixing all the other ingredients?
These cookies were fabulous to say the least! My husband Gord said that is all he has to eat for Breakfast as they are huge and filling!
