These cookies are quick, easy and lots of fun for the kids to help out with. Use your imagination and decorate them anyway you like (I like to use my easiest ever chocolate glaze). They also make a great gift. Who wouldn’t want to receive a delicious shortbread cookie heart for Valentine’s Day?!? The sky is the limit with these easy, delicious shortbread cookies.

Directions:

Yield: Two Dozen Cookies

  1. In a large bowl, add the butter and icing sugar. Blend together using a pastry blender.
  2. Add the vanilla and mix further with the pastry blender.
  3. Add the 3 cups of flour and gradually mix it into the butter mixture, again using the pastry blender. After it is mostly blended, stop using your pastry blender and use a spoon or some other simple mixing tool to continue mixing. (watch the video below for the best mixing instructions)
  4. Sprinkle a small amount of flour on the surface you will be rolling the dough on. Keep moving the dough around as you are rolling it out to prevent it from sticking. Use flour as needed to prevent sticking.
  5. Once the dough is rolled, about 1/4 inch thick, you can use a cookie cutter to cut out the heart shapes (or any other shape you like).
  6. After they are cut out, use a spatula to lift them and place on a parchment lined cookie sheet.
  7. Pre-heat the oven to 300°F. Place the cookies in the oven for 20-30 minutes, until they turn a nice golden color.
  8. Once the cookies have cooled, it is time to decorate. Use your imagination and have fun!

  • 1 and 1/2 cups of Butter, softened to room temperature
  • 1 cup of Icing Sugar, sifted
  • 1/2 tsp of Vanilla
  • 3 cups of All-purpose Flour, sifted
