It’s summer here in the Maritimes and raspberries are plentiful. That is what makes this such a great time to put them to use in a variety of ways. This raspberry vinaigrette is one of my favorites. I picked the raspberries from the bushes in my backyard… try getting raspberry vinaigrette that fresh from the grocery store! It is very quick and easy to make and tastes great on many salad variations.
Directions:
Yield: approx. 4 cups
- In a large measuring cup or bowl, add all of the ingredients. For the vinegar, you can use red wine vinegar, white wine vinegar or apple cider vinegar.
- Using a food processor or blender, mix together.
- Run the mixed dressing through a sieve. This will allow you to remove all the raspberry seeds from the vinaigrette.
- Poor the dressing into a large bottle or mason jar and store in the refrigerator.
It is that simple to make your own delicious and fresh raspberry vinaigrette. ENJOY!!!!

- 2 cups of Olive Oil
- 1 cup of Vinegar
- 2 cloves of Garlic, minced
- 2 tsps of Parsley
- 1/4 to 1/2 cup of Liquid Honey
- to taste, Salt and Pepper
- 1 to 1 and 1/2 cups of Fresh Raspberries
- 1 and 1/2 tbsps of Lemon Juice
