It’s just about blueberry season here in the Maritimes so this is the perfect time to dust off those delicious blueberry recipes. My all-time favorite is this blueberry pie recipe. This recipe is really easy and makes a fabulous pie.

Note: Do not thaw frozen blueberries before using in the pie. Just put them in frozen for better results.

Directions:

Yield: One 10″ pie

  1. Spray pie plate with cooking spray or lightly grease with shortening & set aside.
  2. Mix flour and sugar together in a small bowl and set aside.
  3. Preheat oven to 350°F.
  4. Roll out 1st pie crust on surface dusted with flour.
  5. Line pie plate with rolled out pastry, taking care not to stretch the pastry.
  6. Sprinkle 1/3 of flour and sugar mixture over the bottom of the pie shell.
  7. Spoon in 1/2 of the blueberries.
  8. Sprinkle 1/3 of the flour and sugar mixture over the fruit in the pie plate.
  9. Spoon in remaining blueberries.
  10. Sprinkle with the remaining flour and sugar mixture.
  11. Dot with butter.
  12. Roll out top crust and make slits in the center to vent the pie.
  13. Brush the edges of the bottom crust with water to stick the two crusts together.
  14. Apply top pie crust.
  15. Press a fork around the edges to seal and cut excess pastry off with sharp knife.
  16. Bake on center rack of preheated 350°F oven for 45 minutes to 1 and 1/2 hours or until filling is bubbly and crust is golden brown.

This blueberry pie is delicious on a nice sunny day topped with vanilla ice cream! ENJOY!!!!

  • 1 large Pie Crust, double crusted (recipe here)
  • 6 cups of Blueberries, fresh or frozen
  • 1 and 1/4 cups of Sugar
  • 1/3 cup of All-purpose Flour
  • 1 tbsp of Butter or Margarine

    What pies are the best to freeze? Is is better to freeze before baking them or after they are baked?

    Hi Novi,

    It’s possible that it needed to bake a bit longer. I usually wait until it’;s bubbly really good before I remove it from the oven.
    If you used high bush blueberries instead of the wild ones, that can make your pie juicier too. If that’s the case, just add another Tablespoon of Flour next time.
    If you found it too sweet, you could leave out 1/4 to 1/2 Cup of the sugar next time.
