Hot fudge pudding cake is one of my all time favorite desserts from my childhood!! Our mom used to make this for us on special occasions and I also made it for my kids while they were growing up. It’s so quick and easy and absolutely delicious!!! Serve it warm with a scoop of vanilla ice-cream… YUM!
Directions:
Yield: One 8″ pan (4-6 servings)
- Preheat oven to 350°F.
- Combine in mixing bowl and mix together the first 7 ingredients.
- Spread in the bottom of an 8 inch baking pan or casserole dish.
- Mix the 1/4 cup of cocoa with the 1 cup of brown sugar and sprinkle over top of the cake batter.
- Pour the boiling water over top.
- Bake on center rack of preheated 350°F oven for 45 minutes or until cake feels spongy and pudding is bubbling up.
- Cool on wire rack for at least 30 minutes before serving.
- Serve plain or topped with ice-cream.
Trust me, your kids will absolutely love this dessert, just like mine did. Enjoy!
