These delicious sables will make a great treat this New Year’s. These crackers taste almost like cheese nibs, only better! But you can change the spices and the cheese and make them taste any number of ways.
Directions:
Yield: 2-4 dozen crackers (depending on thickness)
- Mix together the flour, butter, Asiago cheese, cayenne pepper and mustard powder. You can mix this by hand using a pastry cutter or in a food processor.
- Add the water to the dough mixture, 1 tsp at a time, and blend until the dough starts to form.
- After you have added the full tbsp of water, start to form the dough using your hands. You will find that the dough needs more water in order to reach the desired consistency. Add more water 1 tsp at a time. You shouldn’t need much more than 2 tablespoons of water in total.
- You can place the dough on the counter and knead. This should make it a little easier to form the dough.
- Roll out the dough until it is about 1/4 of an inch thick. If you find the dough is sticking to your surface, you can dust it with flour.
- Cut out the sables using small shaped cutters. You could also make shapes using a pizza wheel or sharp knife. Place the cut out shapes on a parchment lined baking sheet.
- Brush the crackers with an egg wash (1 tbsp of water mixed with an egg yolk). Top with your choice of cheese or spices. I kept mine simple by putting a little bit of sea salt and pepper on the top.
- Bake at 350°F for 10 minutes.
These crackers make a great base for hors d’oeuvres. Serve them with a topping or a dip and they will be a huge hit at your next party!

- 2 cups of All-purpose Flour
- 12 tbsps of Butter, cold and cubed
- 8 ounces of Asiago Cheese
- 1/4 tsp of Cayenne Pepper
- 1/4 tsp of Mustard Powder
- 2 tbsps of Water
- Egg Wash – 1 Egg Yolk and 1 tbsp of Water
- Sea Salt and Pepper, to taste
